Granola Bars

Having a child with a peanut allergy in our home puts a limit on a lot of foods we can eat. One of those in granola bars. There is only one chewy granola bar I've been able to find that is peanut free--
Kashi Dark Chocolate Cherry. It's so yummy, but Kashi isn't cheep. I came across some recipes for granola bars and decided to try some. This one was our favorite.

Chewy Granola Bars

  • 2 1/2 c. Quick Oats
  • 1/2 c. Rice Krispies
  • 1/2 c. chocolate chips
  • 1/2 c. butter, softened
  • 1/3 c. brown sugar
  • 1/4 c. coconut
  • 1/4 c. honey
  • 1/2 tsp. vanilla
  • 1/2 tsp. salt

Mix all ingredients together. Stir until well combined. Press into a 9x13 pan. (For thicker bars use a 8x8 pan.) Bake at 350° for 18-20 minutes. Cool for 10 minutes and score into bars. Once completely cool cut into bars.

For variety try adding:

  • Raisins
  • Marshmallows
  • Mini M&Ms
  • Dried fruit

  2. William is super picky about his granola bars (he only likes the sunbelt ones) and he LOVED these!

  3. These look great! I'm going to try them as we have milk, egg, and peanut allergies here.
